解决方案：converter.afterPropertiesSet();

MappingMongoConverter converter = new MappingMongoConverter(mongoDbFactory, context);
converter.setTypeMapper(mapper);
converter.setCustomConversions(new CustomConversions(Arrays.asList(new TimeZoneReadConverter(),new TimeZoneWriteConverter())));
converter.afterPropertiesSet();
MongoTemplate template = new MongoTemplate(mongoDbFactory, converter);
