Should Meat and Poultry Be Washed before Cooking?

The following key recommendations were made to avoid microbial foodborne illness:

● Clean hands, food contact surfaces, and fruits and vegetables. Meat and poultry should not be washed or rinsed.
● Separate raw, cooked, and ready-to-eat foods while shopping, preparing, or storing foods.
● Cook foods to a safe temperature to kill microorganisms.
● Chill (refrigerate) perishable food promptly and defrost foods properly.
● Avoid raw (unpasteurized) milk or any products made from unpasteurized milk, raw or partially cooked eggs or foods containing raw eggs, raw or undercooked meat and poultry, unpasteurized juices, and raw sprouts.

The recommendation that meat and poultry not be washed or rinsed has prompted questions because many people believe washing or rinsing raw meat and poultry makes it safer. Bacteria, if present on the surface of meat or poultry, are easily destroyed by cooking at the proper temperature (2). Cross-contamination may be more likely to occur if raw meat is washed or rinsed because bacteria can be spread between food, surfaces, or equipment.

My Personal Comments:

这篇文章的可信度是很高的，但是我想真的要不洗肉而直接下锅煮好像一时很难让大家接受，所以给个建议：洗肉时最好用专用的水池，不要和洗碗的水池混在一起，切生肉的刀具和跕板也要和其它用具分开。总之，最好将厨房分为专门的熟食区与生食区，并且最好隔得越远越好。
