1. profiles

profiles control a user's object-level  and field-level access permissions.
//用于用户操作 对象级别  和 字段级别的权限控制。

Every user in Salesforce has a profile. Profiles are of two types : Standard profile and   Custom profile.

每个用户都有一个profile，profile有两种类型，标准和自定义

2 Roles

Roles, on the other hand, primarily control a user's record-level access permissions through role-hierarchy and sharing- rules.
